INGREDIENTS

FOR THE TARTARE:

  • 1 lb. wild duck breast (skinless, trimmed of sinew and fat)
  • ½ tsp. Chinese five-spice powder
  • 1 tsp. yuzu juice (or substitute with lime juice)
  • 3 green onions, finely diced
  • 1 tbsp. pickled ginger, finely chopped
  • 1 small cucumber, diced into small cubes
  • 4-5 cherry tomatoes, quartered

FOR THE DRESSING:

  • 2 tbsp. Kewpie mayo
  • 1 tbsp. soy sauce
  • 1 tsp. sesame oil
  • 1 tsp. yuzu juice
  • ½ tsp. pickled ginger liquid

PREPARATION: Serves 4

  1. Prepare the duck:

Rinse and pat dry the wild duck breasts. Dice them into small, uniform cubes (about 1/8-inch). Keep the meat chilled while preparing the other ingredients.

  1. Season the tartare:

In a mixing bowl, combine the diced duck with Chinese five-spice powder, cucumber, green onions, cherry tomatoes and pickled ginger. Mix gently but thoroughly.

  1. Make the dressing:

In a small bowl, whisk together Kewpie mayo, yuzu juice, soy sauce and Chinese five-spice powder. Adjust seasoning to taste.

  1. Assemble the tartare:

Just before serving, gently fold the dressing into the tartare mixture for a fresh and vibrant contrast. Cover and refrigerate for at least 10 minutes to let the flavors meld.

  1. Serve:

Accompany the tartare with crispy wonton chips, sesame crackers, or sweet potato chips. Serve immediately to ensure freshness.
