Why not electric?

Ricky Richoux must get asked that question a lot. His answer comes too quickly when a kibitzer pops the query.

“Electric knife — don’t own one — wouldn’t have one.”

If the questioner presses for a more complete answer, Richoux will patiently supply reasons.

“I can get more meat off and I can do more intricate cuts without it. You can get shocked with an electric knife too. I’ve seen it several times — when water gets in the mechanism.

“They don’t hold up.

“And they are too slow. In answer to those who say it [an electric knife] is faster, they don’t do thousands of pounds like I do.

“I never used an electric knife. I just don’t like them. Got one for Christmas; gave it to my sister to use in her kitchen. I like the feel of blade on the bone.”

Not surprisingly, Richoux is a knife collector.
