Get a whole loin. Covered it with chopped onions,bell pepper,celery,and garlic. Generously cover the vegetables with a 50-50 black pepper/salt mix. Cook uncovered at 225 degrees for 2-1/2 hours. Let stand at room temp for 15 minutes. Serve. I suggest to have a pan nearby and some more spice to sear the cuts up for guests who like it that way.
