Very possible you'll have a new favorite when you make the backstrap parm. I fried mine in italian bread crumbs, then put sliced mozzarella on top and stuck them in the oven on broil just long enough to melt the cheese. Eat it with angel hair and a homemade red sauce, and a glass of red. Bon apetit.
I did the same thing a few weeks ago with paneed backstrap and it was really good. Making it again tomorrow night at the camp. Good stuff.
