I did the same thing a few weeks ago with paneed backstrap and it was really good. Making it again tomorrow night at the camp. Good stuff.
Im not a duck hunter but im thinking about shooting a couple to try this! Do ya'll think woodies would be good cooked this way?
I definitely think woodies would be good to use for this recipe if not better.
Good idea, I have a back strap left over, from the end of last year, that I'll use next time I make this dish.
My favorite is the deer meatballs and deer lasagna my wife has been making.
Very possible you'll have a new favorite when you make the backstrap parm. I fried mine in italian bread crumbs, then put sliced mozzarella on top and stuck them in the oven on broil just long enough to melt the cheese. Eat it with angel hair and a homemade red sauce, and a glass of red. Bon apetit.
