We had a great Independence Day, took a quick trip out to Lake Pontchartrain and caught some nice puppy drum and sheepshead for the grill. Below is our grill fish recipe for the month of July. This recipe is great for redfish too. Like us on Facebook at GlocknersPlace.com
Clean your fish and leave the skin side on, this is an easy, quick and well known recipe. Get your grill nice and hot, you can use gas or charcoal. After you have cleaned and washed your fish place the skin side down and season the meat side with your favorite seasoning. We like to use Tony Chacheres or Zatarain's Creole seasonings. After you have seasoned the fish well spray the meat side down with a butter flavor nonstick spray. We like to heat our gas grill on high and then turn down to low right before we place the fish on the grill. On you hot grill place the meat side down fist and let cook about five minutes. Now that everyone will use different temps on their grill you want to keep an eye on them by just barely lifting the one side, once you see nice grill marks get ready to flip them. Using a nice metal spatula flip the fish to the skin side. Take some seasoned melted butter and drown the meat side of the fish. Close the grill and let cook for about 15-20 minutes. This is where the grill master will come into play, keep checking your fish, once the meat will begin to flake off add a little more of your seasoned butter and remove, plate and eat right off the skin. Watch out for bones. Some people like to squeeze some fresh lemon on top of the fish too. Grilled veggies are a great side dish.
