Hands down the best right now is the black and chrome Hamilton Beach knife. They are getting VERY hard to find. THe last ones I found were at Sears. Here is the key.....when you get home with your knife take is apart, about 3 screws. Clip the wires on both sides of the trigger and wire them together. This will bypass the trigger and the knife will run continuously. This does two things, the triggers often go out the first time you use the knives. Its the weak link. Second, the motor running constant doesn't wear it out as fast from the start and stop of the trigger. It also keeps the fan running continuously keeping the knife cool. For redfish buy yourself a set of 9' Mr Twister blades. They slip right in with no modifications and slice right through a red.
The all time best were the old GE's from about 10 years ago. Those knives are like gold nuggets. They cut like the dickens and lasted FOREVER.
do yourself a favor and stop by bed/bath and beyond and grab a few of their $14 knives. I believe they are Hamilton Beach/GE??? but they are what Mark Trahan (CoCo's) uses to clean 1,000's of trout and they r all he uses.
