tuffhuntin, did you ever make or try nutria sausage, great stuff!! we had a get together one day and a friend of mine brought some nutria sausage. we didn't tell anyone, including the ladies, that it was nutria, and everyone ate the heck out of itand loved it!! we started to tell them after, but changed our mines, because we were afraid what the ladies would do to us?? just call us wusses, its o.k.!!
Beast not at the restaurant but Ive eaten nutria in gumbo, delicious never had choupique though! But I'll try anything once. I'll tell you what my buddy said when we were backpacking in Europe, I had ordered the blood sausage at a Tapas place in Madrid,Spain: my buddy Matt Treme said,"You'd eat sh*t that would make a billy goat puke!" Thats true I'll try anything food related once. Be cool.

I've never eaten, but I am extremely finicky. About 12 or so years ago, the place I worked started having a monthly "pot luck" lunch with folks contributing all kinds of dishes. Well, my friend Bill and I went out to the lease and shot about 10 or 12 nutria. He deboned them and cooked a stew. Everyone who ate it, loved it. After word got out that we had fed them Nutria, that was the last pot luck lunch they had!!!!
They go good in a stew...they're amphibious sqirrels that's all! Strictly herbivores. Any squirrel recipe works just as well with a nutria...but they are a bit stringy, maybe on the pit would be good too...thanks for the idear trapmaster.
These stories are great, the pot luck got canned b/c of the marsh rat! Funny stuff!!
you just use nutria meat, instead of deer, beef, pork or whatever! put the same ingredients and seasoning, just like you would be making any other kind of sausage!! its just like boiling crawfish, just throw anything in the pot you like, with the nutria!! its great and don't forget the bud-lite!!
