Cut into 1 inch steaks, boneless, season and marinade them over nite, and cook like a steak......Black skillet smokin' hot, NO oil or butter. 30 seconds on each side for rare, 40-45 seconds on each side for medium rare. Best steak you'll eat!!!! Most people think i cooked beef tenderloin when I prepare this way. Add some fries or baked potatoes and you got some good grub easy!!!
I take mine and cut them 10 to 12 inches long. Then slice it almost in half lenght ways. Then pound it flat. About a 1/4 to 3/8 thick. Season it well. Then put shredded pepper jack cheese first. Then either put some boudin or pork sausage on it. Then roll it up. After that wray the whole thing with strips of beacon. Use tooth picks tp hold it wrapped up. Put it on the grill. You will love this.
cut backstrap into 1 in cubes and marinate overnight in dales seasoning,terayaki sauce, sliced jalapeno, salt, and pepper. need 1 ea. red,yellow,and green bell pepper and a sweet onion and fresh jalapenos. cut everything into 1 in squares. wrap the backstrap with bacon and stick them on the stick along with all the cut vegetables alternating them then grill. easy, quick and best schick-a-bob ever!!!
Try this one. Use a really sharp knife and unroll the back strap. Cut it about 38' thick long ways. Stuff it with spinach and provolone cheese. You can also stuff it with jalapenos and cheese or anything else you think of. Italian sausage is good. Geaux Tigers!!
